Fix #1619. buildTooltipWithFieldValue() => buildTooltipWithFieldText()

The "value" of FieldVariables was the variable id.
However, we usually want the field text for the human visible tooltip.
Refactoring and renaming buildTooltipWithFieldValue to use the field
text.
