docs: Add/fix some links; avoid pluralisation
Appending `s` breaks the [type@NS.Object] notation, so fix that in ListHeader. Add links to ListItem and Overlay, and avoid appending `s` after `backtick`s just for consistency with the [type@NS.Object] issue.
